Garrison Brothers Distillery Announces Partnership with East Austin Italian Darling Juniper

Top Austin bar team creates seasonal specialty cocktails and chef dinner pairings for National Bourbon DayAustin, Texas -May XX, 2018-Garrison Brothers Distillery is proud to announce a newly forged partnership with Juniper, an East Austin farm-to-fork restaurant offering contemporary fare inspired by the old world standards and culinary traditions of Northern Italy and the rich flavors of Texas. What began as a single-night cocktail feature for Texas Independence Day in March 2018 has blossomed into a creative connection between bourbon makers and bourbon drinkers. To celebrate Juniper’s Texas influences, its team of principal bartenders will take turns crafting and featuring new Garrison Brothers cocktails for every season.“I modeled our cocktail program after a foundation of classics,” said Ryan Foster, bar manager at Juniper. “From there, we branch out to highlight seasonal fruits, house syrups, and ingredients from our garden and around Central Texas. Juniper is unique because the bar is located in the kitchen, which inspires creativity with ingredients.”Foster’s use of Garrison Brothers Bourbon to create a new cocktail was a natural progression from his penchant for highlighting local ingredients. “I loved the idea of using a high-quality bourbon that was Texan from grain to glass.”Every step —from cooking the mash to bottling —takes place right there on site at the GarrisonBrothers Distillery in Hye, Texas. They make bourbon in a range of ages and finishes, but it’s the scorching Texas climate that has an intense impact on the bourbon’s flavor. Once the charred oak barrels have been filled with the distillate (white dog), the constant fluctuation in temperature from hot to cool causes the bourbon in the barrels to swell and shrink, forcing the aging bourbon to cycle through the wood’s crevices. As it moves in and out, the liquid extracts sugars from the sap in the wood’s pores, yielding a bourbon with a distinct, rich caramel color and bold flavor. “We believe the Texas heat makes a better bourbon than a bourbon made in the Kentucky climate,” owner Dan Garrison says. For spring, Foster created an up cocktail featuring the 2018 vintage of Garrison Brother’s signature Small Batch Bourbon. He named it Trouble in Mind, after an early blues song first recorded in 1924 and covered by many Texan artists since. The cocktail uses uniquely Texan ingredients and incorporates fresh grapefruit from the Rio Grande Valley, hand-squeezed lime juice, organic maple syrup, and a special ingredient —kombucha.“We have a great kombucha that we make in-house here, at Juniper. It has a citrusy-honeyed quality to it, and I wanted to use that to complement those same notes in the bourbon.” Available through May, the Trouble in Mindcocktail is a celebration of artisanal ingredients from local Texan makers. On deck for Derby Day (May 5) and summer is the Il Palio Smash, a refreshing combination of Garrison Brothers Small Batch Bourbon, Zucca Rabarbaro amaro,Rothman & Winter Orchard
Peach Liqueur, hand-squeezed lime juice, turbinado sugar, and fresh mint leaves. The cocktail takes its name from Palio de Siena, a horse race held twice each year, on July 2 and August 16, in Siena, Italy. Chef Yanes and his team recently visited the Garrison Brothers Distillery in Hye, Texas, to tour the grounds, touch the two-row barley grown on site, learn how the bourbon is made, take part in the bottling process, and taste through select barrels to create a custom blend for the restaurant. This custom blend will be highlighted in a ____course bourbon-pairing dinner on National Bourbon Day, June 14.
