We didn’t just set out to make a Bottled in Bond. We set out to make the best Bottled in Bond on the market. Distilled in the Fall 2019 season, heat-forged in the scorching Texas sun, matured six years, and bottled at exactly 100 proof—this is our pledge to the letter of the 1897 law and to the standards we hold ourselves to in Hye.
What Bottled in Bond Means
A legal promise of authenticity since 1897: one distilling season by one distiller at one distillery, aged in bonded storage under U.S. government supervision, and bottled at exactly 100 proof.
Our inaugural release was distilled Fall 2019.
The Garrison Brothers Way
Everything happens here at our ranch in Hye, Texas—cooked, distilled, barreled, and bottled. We laid these barrels down for a full six years in new, charred American oak as the Hill Country’s wild swings of heat and cold pushed the whiskey deep into the wood and back again. Then we bottled it at a rock-solid 100 proof so the character stands tall in the glass, neat or in classic cocktails.
Why It Matters
Bottled in Bond was the first consumer protection for American whiskey. A century later, it still signals trust. For Texas distilling, this release marks a milestone: a bonded bourbon born, raised, and bottled right here in our Hill Country home—distilled in the Fall 2019 season and aged to a true six years.
Tasting Notes
NOSE Oaky and smoky, with tobacco, leather, and campfire kindling.
PALATE Toasted oak and heavy wood sugars—robust, earthy, deep, and full. Drinks like a cross between maple syrup and homemade root beer, rich with sassafras and sarsaparilla.
FINISH Layers of caramelized dark chocolate follow, mingling with plums, nectarines, roasted almonds, and toffee for a mouth-watering finish.
