This 98 proof beauty has been aged 5 years in the searing Hill Country heat, resulting in a perfect mix of sweet and spicy that’s unlike anything we’ve ever made before. Unlike Anything We've Made Before

To make a bourbon stand out in our award-winning lineup, we needed a stand-out grain. Rye, commonly known as the “flavor grain,” is known for the spicy and savory notes it yields when distilled into a spirit. These qualities starkly contrast the sweet vanilla and warm caramel flavors in our white corn, the primary grain used in bourbon. Hye Rye is crafted from a ratio of corn, barley, and, instead of our usual wheat, organic rye. When the opposing flavor profiles come together in our amber spirit, the result is a sweet and savory rye bourbon with honeyed hints of warm molasses and caramel, complemented by notes of spicy pepper, earthy grains and soft leather.

Liquid Story - How It's Made.

Released only once with just 1,000 bottles produced, Hye Rye quickly became one of the most coveted expressions in Garrison Brothers history.

In 2012, Master Distiller Donnis Todd set out to create a bourbon unlike anything we’d ever made. Instead of our traditional red winter wheat recipe, he sourced organic Texas-grown rye from Justin Crownover’s Lonestar Family Farms in Sunray, Texas and crafted a bold new mash bill of 52% corn, 37% rye, and 11% malted barley. Then, like all bourbons, the mash is fermented and distilled into white dog before it enters our new American white oak barrels, where time and the scorching Texas heat would take over.

For six years, those barrels endured dramatic temperature swings in the Texas Hill Country. Over time, the whiskey developed layers of caramel, molasses, toasted oak, and black pepper, creating a bourbon with exceptional balance and unmistakable Texas character.

Today, the next chapter of Hye Rye is already underway. The barrels destined for its return continue to mature beneath the scorching Texas sun, drawing deeper flavor from the oak with every season and developing the bold spice and complexity that have made Hye Rye legendary.

The wait may be long, but great bourbon can’t be rushed. Every day in the barrel brings Hye Rye one step closer to the bold character and layered complexity worth waiting for.
