About the Chipotle Bourbon Queso Dip
A smoky, spicy cheese dip made in one pot in 15 minutes. Sharp cheddar melts into hot milk, then gets thickened with Garrison Brothers Small Batch and cornstarch and spiked with puréed chipotles in adobo. Cilantro on top, a mountain of chips on the side.
Why mix the bourbon with cornstarch?
It makes a slurry that thickens the queso without lumps, and it adds the bourbon's caramel note at the same time.
How do I keep queso smooth?
Shred your own cheddar (bagged cheese has anti-caking powder), add it slowly and keep the heat at medium.
Can I reheat it?
Yes. Warm it over low heat with a splash of milk, stirring until smooth again.
