About the Hye Tai
Texas meets the tropics. Our riff on the Mai Tai puts Garrison Brothers Small Batch in the lead, backed by a splash of aged rum, nutty oloroso sherry, apricot liqueur, fresh citrus, pineapple and orgeat, with a barspoon of pimento dram for warm spice. Served over pebble ice, tiki-style.
How is the Hye Tai different from a Mai Tai?
A Mai Tai is built on rum. The Hye Tai leads with Texas bourbon and keeps just a splash of rum, then adds sherry, apricot and pimento dram for more depth.
What is pimento dram?
An allspice liqueur from Jamaica. A barspoon adds warm, clove-like spice.
What is pebble ice?
Small, chewable nugget ice. Crushed ice works too; both chill the drink fast and dilute it just right for tiki.
