Chipotle Bourbon Queso Dip

Corn tortilla chips served with a spicy cheddar queso made with Garrison Brothers Bourbon, chipotle peppers and cilantro. Yield: 8 servings


¼ Cup Garrison Brothers Bourbon
1 ½ Tbsp. Cornstarch
1 Cup Milk
2 Cups Cheddar Cheese, Shredded
2 Tbsp. Chipotles In Adobo Sauce, Pureed
1 Tbsp. Cilantro, Chopped
As Desired Corn Tortilla Chips

1. In a small bowl, whisk together the Garrison Brothers Bourbon and cornstarch.
2. Heat the milk in a large saucepan over medium heat until it begins to simmer.
3. Gradually add the cheddar cheese while whisking until the mixture has become smooth.
4. Add in the Garrison Brothers Bourbon mixture and chipotle puree.
5. Whisk and cook for 1-2 minutes or until the mixture slightly thickens.
6. Garnish with cilantro and serve with the tortilla chips.
