Mint Julep Apple & Brussel Sprout Salad

Shaved Brussel sprouts tossed in a mint-Garrison Brothers Bourbon vinaigrette and topped with chopped bacon, bleu cheese crumbles, granny smith apple and toasted pecans. Yield: 8 Servings


1/3 Cup Garrison Brothers Bourbon
¾ Cup Sugar
½ Cup Apple Cider Vinegar
2 Tbsp. Fresh Mint, Chopped
To Taste Salt
To Taste Black Pepper
1 ½ Cup Vegetable Oil

8 Cups Brussel Sprouts, Shaved
¾ Cup Bacon Bits
¾ Cup Bleu Cheese Crumbles
¾ Cup Granny Smith Apples, Julienned
¾ Cup Pecans, Toasted

1. In a small mixing bowl, combine the Garrison Brothers Bourbon, sugar, apple cider vinegar, mint, salt and black pepper.
2. Slowly whisk in vegetable oil until the vinaigrette is evenly combined.
3. Toss the Brussel sprouts in some of the vinaigrette and reserve the rest for more salads.
4. Top the salads with an even amount of bacon bits, bleu cheese, apples and pecans.
